How to Open a bottle of Champagne

To ensure that all staff open a bottle of Champagne according to the standard.  
  1. To show the guest the bottle by resting the bottle on your right hand long ways, making sure that the label is facing outwards.
  1. To place the bottle of Champagne in the Champagne bucket in front of the table. Making sure that the folded napkin is covering the top of the bucket.
Note. Make sure that the bucket is filled with 1/3 ice and 2/3 cold water. Make sure that your waiters cloth covering the bottle is clean and un torn and folded long ways.
  1. To cut the foil in a clockwise direction making sure that the top portion is only cut. Placing the foil in your pocket.
  1. To unscrew the steel cradle and remove it, whilst holding the cork down with your thumb. Place the steel cradle into the ice bucket or your pocket.

  1. Remove the bottle from the ice bucket and place your left hand over the cork thus holding the cork in the bottle. Place your right hand at the bottom of the bottle holding the base.
  1. Hold the cork between your thumb and index finger turn the cork anti clockwise and turn the bottle clockwise at the same time.
  1. Remove the cork without a large noise taking place. Place the cork in the ice bucket or your pocket.
  1. With your waiter cloth wipe the debris from the top of the bottle in a clockwise motion.
  1. Pick up the champagne glass from the table, pour while holding it, then place it after finish pouring back on the table.
  1. . Note. Never pour more than 2/10 of the glass
  1. Wait while the host tastes the Champagne and give his approval. Once approval proceeds lift glass from the table hold at slight angle while pouring, pour the ladies firstly moving around the table clockwise. If no ladies are on the table pour the gentlemen first in a clockwise motion then pour the host last.
  1. Note. NEVER POUR THE GLASS MORE THAN 7/10 FULL. SHOULD THE HOST COMPLIANT THAT THE CHAMPAGNE IS BAD IT MUST BE REPLACED WITHOUT QUESTION
  1. Once the guests Champagne is poured finish pouring the host glass. Always twisting the bottle so that no Champagne is spilled on the table. Note. Place the remainder of the bottle in the Champagne bucket covered with a white napkin.
  1. Farwell yourself from the table
  1. Make sure that you return to the table to pour more Champagne or to offer the host another bottle.
